What's the recipe for the oatmeal bars? Also, what did you put on the broccoli slaw? It all sounds wonderful!

For the chicken and broccoli:  I baked and shredded a pound of chicken breast and added that to about 3/4 of a bag of broccoli slaw.  I mixed that with 2 T. hoisin sauce, 1T. rice wine vinegar, 1T. low sodium soy, and 1tsp. minced ginger.  You can eat that hot or cold.

For the oatmeal bars:

  • 2.5 cups oats
  • half cup coconut milk
  • 2 T. peanut butter
  • enough applesauce to make it come together
  • 1 tsp cinnamon
  • blueberries, nuts, coconut, whatever you want

Mix it all together and bake it at 350 for about 35 minutes.

Meal prep morning!

Because I want to drink during the game and I don’t trust myself to get it done tonight.  So here’s what I’ve got:

  • Egg muffins…just spray a muffin tin with cooking spray, add your favorite veggies and some parmesan or feta, cover with beaten eggs and bake.  
  • Oatmeal bars with blueberries, coconut, and walnuts
  • Asian seasoned chicken over broccoli slaw
  • Mexican seasoned chicken with bell peppers
  • Modified stroganoff made with turkey meatballs and spaghetti squash instead of pasta.

It took 2.5 hours to cook all that and clean it up, but I have all of my breakfasts and lunches ready to go for the week.
